Keeping it Healthy: Day Twenty-Four
January 12th, 2009Sweet Potatoes are an excellent food because they are low in sugar and high in vitamins!
According to nutritiondata.com:
“This food is low in Sodium, and very low in Saturated Fat and Cholesterol. It is also a good source of Dietary Fiber, Vitamin B6 and Potassium, and a very good source of Vitamin A, Vitamin C and Manganese.”
Here is an easy recipe to satisfy your sweet tooth:
Peel two large sweet potatoes and chop into chunks.
Place in a greased baking pan (use a spray instead of butter or oil).
Pour about 1/2 cup of juice (orange juice, pineapple juice, apple juice) whatever you fancy. The juice should be just enough that the potato can soak up the liquid.
Cover with foil and let it bake at about 375 degrees for 40-60 minutes or until potato is tender to the touch.
Take potatoes out and sprinkle them with a little bit of brown sugar.
Remove the foil and pop back in the oven under the broiler (watch it like a hawk!) for about a minute or so until the sugar is nice and melted.
This is the healthier version, so you’ll notice there is no butter.
